Wondering if anyone out there makes their own fish jerky?
I got a bit tired of smoked fish and thought I'd try something new.
Bough a food dehydrator and made my first snapper jerky yesterday.
The result is quite good but definitely too salty.
Here is how a made it:
It dried pretty quick because the pieces were quite small.
It's good with beer. Consistency is almost like beef jerky.
Next time I need to make some changes to the marinade though, to make it less salty.
Maybe instead of using store bought teriyaki, I'll make my own from soy sauce, brown sugar and some more spices and perhaps some lemon juice.
Has anyone tried drying fish and perhaps got some recommendations for a nice marinade?

- I made a marinade from about 80% teriyaki sauce and 20% soy sauce.
- I cut three fish fillets into small evenly sized pieces and marinated it for about 20 hours.
- I just chucked it into the dehydrator and left it running on high temperature ~70C or 158F for about 7 hours.
