Hey mate,

My favourite rig for beach fishing is a two hook dropper rig. If there's a lot of current or waves I normally use a breakout sinker to keep the bait in place. Otherwise just one of those torpedo style sinkers.

I found that I can cast further with medium sized sinkers rather than really heavy ones.
But the sinker weight and casting range depends on the rod you are using.

These two hook rigs are pretty easy to make yourself. Or you could get a few ready made flasher rigs from a shop.

I think for mullet you would need really small hooks.
I have never caught a mullet but I believe they can be a bit difficult to hook.
A flasher rig with small hooks is probably a good choice for mullet.
As Mark says, mullet can be tricky to catch.

I have never targeted mullet off the beach before. But I have gone after them in creeks and lakes. Over the years I have seen very large schools of mullet on the beach, usually where the sand meets the rocks and usually on the calm side (ie north side if the wind is south).

I have heard of mullet taking flies and even small soft plastics. But I only use bread when I target them. I have thought about this for a couple of days now, and I cannot think of a way to actually target running bull (sea) mullet off a beach...other than a net.

Mullet aside. My choice for general beach fishing is a 2 hook gang. You can make your own but I like the Mustad with the swivels. Any tackle store has them and you can even get them in Kmart. They come as a standard 3 hook gang. The top hook can be removed by lining the barb up with the swivel eye...if you try it you will see what I mean.

The 2 hook gang allows you to use half a pillie (pilchard). When you want to use a whole pillie or 3 gang hook, you can simply put the top hook back on...do that with a standard gang !!!

Needless to say, my choice of bait for the beach is the good old pilchard.
