Hey mate, I guess I just had too many snapper so I grew a little tired of em, LOL.
If you like sashimi then Trevally is superiour as it has a better texture. And then there is the scarcity factor. Snapper are easy to catch and everywhere. I don't get Trevs as often - so scarcity makes them more valuable and tasty I guess, haha.

For me the thing with Trev's is that they gotta be really fresh. Like straight out of the sea into the pan or onto the sashimi platter. Snapper seem to keep much better. So when buying from a fish monger, snapper probably taste fresher. Just a guess as I have never purchased Trevally. If they were handled correctly and kept on ice I guess it might be okay. I find snapper can vary in taste quite a lot. Sometimes they taste really good and sometimes the meat is tough, dry or even has a bit of a fishy taste, depending on the location, time of year and size of snapper. Snapper in the 40cm size range a usually the best. I find that on anything bigger the meat isn't so nice and juicy anymore. I usually get strange looks when I say that snapper aren't my favourite fish, LOL. Everyone seems to be crazy about snapper over here in NZ and I guess in AU as well. All the fishing shows are about snapper, the tackle shops are full with snapper lures. Snapper photos everywhere. I know quite a few people that would only eat snapper and no other seafood.
